      When I open a new project using a saved template and then try to save the project with ALL ENTERPRISE Custom Fields & Global Items, Project Pro 2016. The template has about 150 tasks …

      Any ideas on what Project Pro may be crashing would be appreciated.

      Are your updates current? Was the template created early in the Project 2016 lifecycle (maybe during the preview). I do know of issues with Project 2016 and templates that just got fixed or in an upcoming release (I actually went to Microsoft on this bug). It might be a corrupted view. Try updating the template and recreating out of box views (Gantt chart). Review recent updates and see if you see a fix for something like this.
