There are documented in the box data types for creation of enterprise custom fields provided in Project Server 2010.  They are cost, date, duration, flag, number and text.
I have a need to create a custom enterprise field which is a “user”.  SharePoint allows this field type, and I’m wondering if anyone else has come across this type of need and how they were able to accomplish it.

Bad news sorry Ginger. This is not possible out of the box. The only "user" that is registered is the Project “Owner”; ie the PM.
Text fields are often used to designate other roles.
Other wise, I have often linked the Project Details with Sharpoint lists of project roles (Board Exec, Senior User, etal) via Reporting services.
