I’m trying to display a simple text breakdown of the projects to the left with the gantt chart to the right, which view would work best for this aesthetic?

Gantt chart view? You can use twisties to simplify the task display on the left. But perhaps I am not understanding the question 🙂

If I’m understanding your question, I think a customized Gantt view would be your best bet. Modify the columns on the left side to insert columns you want or hide the columns you don’t want. Save the view with a new name and you should be set to go.
